VITICULTURE & WINEMAKING
At the winery, each parcel of Pinot Noir was handled individually to emphasise the unique characteristics of each vineyard block. The parcels were cold macerated for five days before being warmed and inoculated with selected yeasts. A fast, hot fermentation followed with regular hand plunging to craft a wine with elegance and balance. The parcels were then gently pressed off, with a portion going to a mixture of new and older French oak barriques to undergo malolactic fermentation and to age before blending and gentle filtration prior to bottling.

“Full, moderately deep, dark ruby-red colour with youthful purple hues. The bouquet is soft, broad and voluminous with layers of red florals and red berry fruits harmoniously interwoven with red plum and spicy nuances. Medium-bodied, gentle flavours of soft red berry fruits and red florals form a rounded core and palate line. Lacy acidity and supple tannins subtly add to the depth and presence, and the flavours build in richness, revealing attractive spicy oak notes. The positive mouthfeel and textures drive the flavours to a very long, lingering finish. This is a smooth and harmonious red-fruited, spicy Pinot Noir that grows in in richness and texture. Match with Asian cuisine over the next 4-5 years. Awatere Valley fruit fermented to 14.0% alc., the wine aged 7 months in 25% new French oak barriques. 4 Stars 17.5+/20.”
