Our signature wine, Talisman, is a secret blend known only to our winemaker, a unique embodiment of the very best wine our Hawke’s Bay vineyards have to offer. The secret blend of varieties creates rare complexity and harmony in our Talisman wine.


This seamless interplay of different varietal flavours brings the palate to life, while supple, focused tannins frame the long finish. This is a wine you can enjoy on release or cellar for up to a decade.

VITICULTURE / WINEMAKING
For Talisman we have identified the very best areas within our company vineyards in the Fernhill, Twyford and Mangatahi sub regions of Hawke’s Bay. The vines on these areas are low in vigour, low in yield, and consistently give superior fruit. The vines are thinned to one bunch per shoot soon after flowering and the fruit zone fully leaf plucked to ensure an even crop of fully ripe fruit. The 2014 season was outstanding in Hawke’s Bay with very dry weather and moderate temperatures giving perfect conditions for ripening and harvest. We ensured that our canopy and crop management was carried out early to maximise the potential of the vintage which was characterised by excellent ripe balanced fruit at moderate brix.

WINEMAKERS COMMENTS
The fruit was harvested when fully mature according to differences in variety, clonal material, and vine vigour. The grapes were de-stemmed and gently transferred as whole berries to small open top and closed fermenters. Traditional warm fermentation ensued with temperatures peaking at 35°C. Cap management techniques included hand plunging, and pump overs, depending on the variety and vessel. After Primary fermentation the wines were macerated on skins for up to a month for optimum tannin integration. The wines were then pressed off, settled, and run to barriques where malolactic fermentation occurred. After racking the wines were matured in barrel for the next 16 months with regular topping. The blend was progressively assembled throughout the winemaking process to ensure optimum integration. Light filtration for clarity was all the wine needed before bottling.

WINE AND FOOD

Talisman is a rich complex wine with aromas of cherry, blueberry, blackberry and blackcurrant, along with smoky and savoury notes from barrel aging. The palate is dense and vibrant with plummy fruit, rich tannins, toasty oak, and a long fine finish.
Excellent matched with beef steak, venison casserole or rabbit.

There's a silkyness to the way in which this wine reveals its core - lots of black fruits drive the varietal campaign with black doris plums making a show a long the way; there's no doubt about the complexity and masculine drive. Violets. On the palate - very youthful indeed with loads of tannins and acidity, plenty of bold black fruit flavors, complex and long. A charming wine in its early years. A long adventurous finish. Well made. 5 Stars

The signature wine of Crossroads, a secret blend of varieties, the best fruit from Fernhill, Twyford and Mangatahi, fermented to 12.5% alc., the wine aged in predominantly new oak barriques. Very dark, deep, black-hued red with lighter ruby on rim. The bouquet is full and complete with a complex array of ethereal aromatics, showing waves of black berry fruits, plum, liquorice, earth and spices, along with dark herbs, reductive elements and toasty oak. Medium-bodied and stylishly presented, succulent black fruits are interwoven with savoury and spicy flavours of herbs, earth and game, revealing oak toast and reductive complexities. This builds in fruit concentration as the fine-grained tannin extraction unfolds, forming a rounded, deep core. Discreet acidity adds to the balance, providing gentle drive and line. The wine carries through to a long and sustained finish with savoury fruit and earthy notes. This is an elegant, concentrated and complex medium-bodied blended red with a complete array of flavours. Match with game meat, casseroles and hard cheeses over the next 6-8 years.
