Tawny Port is one of the wine world’s most historic and cherished wine styles. To achieve the soft, mellow complexity and subtle richness that makes Port so appealing we sourced a basket of classic red grape varieties from our Hawkes Bay vineyards. In keeping with Port tradition we combined base wines from across three different vintages, all excellent years over the last decade.
Port is produced by fermenting rich, ripe red grapes to extract colour and flavouring compounds early in the process. We hand-plunged and pumped the juice over the solids giving us an aromatic and new rich wine. Before the natural yeasts had converted all of the grape sugars into alcohol we fortified the new Port, with a neutral spirit, leaving it balanced with residual sugar.
The gradual barrel ageing and blending of the base wines is what makes Port so special. We progressively blended the younger with the older wines by hand over several years to create a complex and mellow style.
WINE AND FOOD
Beautifully integrated nuances of hazelnuts, hot fudge, mahogany and vanilla underpin a sweet ripe, core of fruit. A very balanced palate leads onto a long, elegant finish.
